Sunshine Stew and Dumplings
2 Sweet Potatoes (Peeled & Chopped)
4 Carrots (Peeled & Sliced)
1 Yellow Pepper (Chopped)
1 Red Pepper (Chopped)
1 Onion (Sliced)
1 Tin of Sweetcorn, or Fresh Babycorn
2 Vegetable Stock Cubes
1/2 Tomato Pesto
1- In a bowl, mix together Veg Suet and Flour, at a roughly 50/50 mix.
2- Add Water, until you have a stiff dough.
3- Roll into walnut sized balls.
1- Soften the Onion in a little Olive Oil and Butter.
2- Add the Peppers, Sweet Potato and Carrots.
3- Make up the Stock and pour over the veg mix.
4- Cook gently until veg is almost tender, then stir in Pesto (I also like to add Reggae Reggae Sauce or some other jerk sauce)
5- Add tin of drained Corn or fresh Baby Corn.
6- Place the dumplings around the the dish and cook for another 10-15 mins.
7- Garnish with a small bunch of fresh chopped herbs to finish. (I enjoy Flat Parsley and Thyme)
