Chickpea, Courgette & Carrot Burgers
1 Clove Garlic (Diced)
1 Onion (Diced)
3 Carrots (Grated)
1 Courgette (Grated)
2 Slices of Brown Bread (Blended)
1 Tin Chickpeas (Blended)
2 Desert Spoons of Peanut Butter
1 Desert Spoon of Korma Paste
Salt & pepper
Flour (for Dusting)
Oil and/or Butter
1- In a frying pan on a medium heat, soften Garlic & Onion in a little Butter/Olive Oil mix.
2- Then add Carrots cook for just long enough to soften a little.
3- After the carrots have softened, add Courgettes, mix & stir well, cooking again briefly.
4- Then in a biggish bowl mix the Breadcrumbs & Chickpeas, and add to it the veg mix & stir.
5- Stir in Korma Paste & Peanut Butter & season...
6- Finally take a good spoonful, roll in Flour, pat flat into a burger shape & fry in either Oil or Butter for approx 5 mins each side.
Delicious served in a toasted pitta bread with salad mayo or ketchup... Grandkids always add a slice of processed cheese too!
