Sunshine Stew with Dumplings: (Cooked in my new Jamaican Dutch Pot)
2 peeled and chopped Sweet Potatoes
4 nice big Carrots peeled and sliced
1 small yellow and 1 small red Pepper chopped
1 med Onion sliced in rings
small tin of Sweetcorn, or pack of fresh babycorn
Sea Salt, fresh Black Pepper
2 teaspoons Marigold Vegetable Stock
1 Pint boiling water
1/2 jar Sacla Creamy Tomato Pesto,
or.....if you like it warm n' spicy, add a good splosh of Reggae Reggae Sauce.

Dumpling Mixture:
I use Atora Veg Suet, make up according to pack...
approx 1/2 Suet to Flour, add water to make a stiff dough...roll into walnut size balls.
Soften the onion in a little Olive Oil and Butter, add the Peppers, Sweet Potato and Carrots make up stock and pour over, cook gently until veg is almost tender, then... stir in Pesto, or Reggae Reggae Sauce add tin of drained corn or fresh Baby Corn... put the Dumplings around the the dish and cook for another 10-15 mins, small bunch fresh chopped herbs to finish... Flat Parsley and Thyme or Summer Savoury |
