Roast Aubergine, with fresh Ginger and Garlic Butter
Take a couple of nice ripe and soft aubergines, grill all over, keep turning on the coalpot until browned and well softened, but not too much! Before they collapse, wrap in well buttered foil, with fresh grated ginger and crushed garlic, when coals have burned low, lay foil parcels directly on the charcoal, the warmth in the claypot will carry on the cooking, this dish is sublime! just scoop up with crusty bread and enjoy.
