Caribbean Rum Punch:
Follow this rhyme and you will never forget the proportions 1 of sour, 2 of sweet, 3 of strong and 4 of weak!
1/8 cup fresh lime juice
1/4 cup sugar syrup, or 60gms sugar
3/8 cup Wray and Nephew Overproof Rum
1/2 cup fresh Orange or Pineapple juice
2 dashes Angostura Bitters
Stir well...add, ice cubes, decorate with....
Lime slices, Maraschino Cherries......serves 2
Ainsley's Mum's Caribbean Rum Punch:
(borrowed from Ainsley Harriott's Barbecue Bible)........ well worth buying a copy....full of gorgeous finger licking recipe's! Makes 2 x 1.75 litre jugs...16 glasses
175gms granulated sugar
175 mls boiling water
juice of 4 Limes and 4 Lemons
1 Teaspoon Angostura Bitters
400 ml canned Mango Pulp (if you can't find any..... whizz up canned Mango slices in a blender)
150 ml Strawberry Syrup (optional)
250-300 ml White Rum (more Rum....more dancing!)
1 litre Tropical fruit juice
1 litre Lemonade or Sparkling Water
plenty of ice.....Lime and Orange slices to decorate
Stir: the Sugar and boiling water together to dissolve...allow to cool
Mix: sugar syrup with Lime and Lemon juices, Angostura, Mango Pulp, Strawberry syrup and Rum...
Chill: until ready to serve, then add the Lemonade or Sparkling Water...serve over plenty of ice....and decorate with Orange and Lime slices. (a little finely grated Nutmeg on top gives it that extra something!)
